POTATO PANCAKES

Ingredients:

6 each Potatoes, medium
1 each Onion, medium
2 each Eggs
1/4 cup Flour
1 tsp Salt
1/4 tsp Pepper
1 each Syrup, maple
1 lb Bacon, suggested
1 each Towels, paper
3 tbs Oil, corn

Hardware:
Heavy Skillet, suggest cast iron
Potato Peeler
Grater
Spatula

Serves 8.

As you peel the potatoes, add to a bowl of VERY cold water which covers potatoes. As you grate potatoes add to another bowl of VERY cold water that covers them. Drain potatoes and dry on paper towels. In large bowl; mix eggs enough to combine yolks and whites. Stir in rest of ingredients (except oil). In large heavy skillet, over medium heat, heat 3 tablespoons of oil. Drop about 2 tablespoons of mixture into oil, spread into 3 inch patties. Turn once; fry until cooked thoroughly and golden brown (5 6 minutes). Drain on paper towels. Serve hot with maple syrup.

NOTE: This makes a "stick to your ribs" breakfast but can be improved by first frying two pieces of bacon for each Patrol member to go with their pancakes.
